Mistakes to avoid
- Having too many wines by the glass open at once — if more than 6-8 wines are open by the glass, quality degrades and waste increases; close the loop on your by-the-glass program every night
- Pricing wine without understanding wholesale cost — if you pay $18 wholesale for a bottle and price it at $48, you're making less margin than the table that orders the $14 wholesale bottle at $52; know your margins, not just your prices
- Not training non-sommelier front-of-house staff to describe wine — in most restaurants, servers are the sommeliers; every server should be able to describe any wine on the list in 30 seconds or less
- Ordering wine speculatively without a plan to sell it — a $200 bottle of wine that sits in the cellar for 18 months ties up capital and may become over-aged; never order wine you can't explain how you'll sell
