Mistakes to avoid
- Running tasting courses at the same pace regardless of wine — if the wine pairing for Course 7 is a full-bodied Barolo meant to stand up to a rich braised short rib, pouring it 5 minutes before the course arrives gives the wine time to open but means the wine is drinking well before the food arrives; timing matters
- Not having a backup plan for a course that falls apart — if the sorbet course for Course 9 is ruined, the kitchen needs a 90-second backup (fruit, cheese, or ice cream that can be plated in that time); always have an emergency course ready
- Forgetting that guests need a pace reset between very rich courses — after a heavy Course 6 (risotto with truffle), Course 7 should be lighter (a palate cleanser); serving two heavy courses back-to-back without a cleanser causes guest fatigue
- Not briefing the sommelier on modified courses — if Course 5 is modified for a gluten-free guest and the sommelier pours a wheat-based beer or dessert wine with it, the modification was for nothing; sommelier must know every modification
