Mistakes to avoid
- Asking staff to "act like critics are coming" during a suspected inspection — experienced inspectors know when they're being treated differently; the inconsistency itself is a red flag; maintain the same standard always
- Responding defensively to negative reviews — "I'm sorry you felt the food was cold, but our kitchen is..." starts with the word "sorry" but immediately undermines it; take responsibility without qualifying
- Ignoring the date of reviews when analyzing patterns — a review from 3 years ago is not relevant to a current issue; always look at the most recent 6 months for operational patterns
- Not training the host and manager on review response policy — any team member who responds to a review without review can create a PR crisis; centralize review response in the GM or ownership
